Last week I uploaded a photo of my turkey taco wraps via Instagram (@EbonyCPrincess) and many of you requested my recipe, along with other meals I’ve shared. I can and like to cook, but I mostly share my meals as healthy meal inspirations for others. However, I do get ideas from other bloggers all the time so I understand the request. I will try to share a few recipes per month from some of my favorites.
I should warn you that while I do like to cook, I hate cleaning up the kitchen and I don’t have the time – especially with all the tennis I’ve been playing – to do a lot of extensive prep work. So, I cut back in time and clean-up by purchasing convenience items: frozen chopped vegetables, canned beans, pre-made marinades, etc. I have a few tricks to make them as healthy as possible, and always mix them in with fresh selections also but if convenience cooking as I like to call it isn’t your thing then my style of cooking may not be for you!
Last week I made Turkey Taco Wraps, which is basically a taco with healthy substitutions. Lettuce instead of tortilla wraps, lean ground turkey instead of ground beef, low sodium seasoning, etc. I am sure I was inspired by a random photo on Instagram or magazine, but I basically prepared it with the ingredients and style I prefer. You can always put your own spin on it. I’m calling this a taco wrap, but could also be considered a taco salad as well.
I thought presenting the meals on recipe cards would be a nice touch for those who are Pinterest fanatics or may even b old school and prefer printing them out and storing in the kitchen.
